Hook & Cleaver

Chef Joseph Fasy was raised in an Italian Restaurant Family. He has 35 years of culinary experience that include the Biltmore, Hotel Sofitel, and Le Cirque in New York City. He was also the executive chef for the Stadium Hospitality Village at the 1996 Olympics in Atlanta. Having previously owned his own Catering Company (Fasy’s Fine Foods) and Restaurant (Tony’s Bourbon Street Oyster Bar) he brings a certain sensibility to gourmet cuisine. Joseph is currently the proprietor of Hook and Cleaver Market on Broad, a boutique butcher market in Fuquay-Varina. His new company is called Catering by Hook and Cleaver and with experience that spans three decades and thousands of events this is the premier caterer for Southwest Wake County. He writes food articles, blogs and is working on an exciting cookbook project. Having also been featured by The News Observer, Cary Living Magazine, and UNC-TV’s Flavor NC. Featured in 2016 Competition Dining Series he captained Fuquay-Varina’s Best to a victory in Battle Tuna and Olives. Along with being involved in many community events such as Savor Fuquay-Varina, BBQ Blues and Brews, and Dinner on Depot Street, Chef Joseph is the go to guy for all things local when it comes to the NC food scene. Having recently catered a Farm to Fork Dinner for 600 at North Carolina State University, where he is a member of the Wolfpack, having graduated from there with an Agricultural Degree in 2015.
